Matt and Heather Morris are good friends of mine and I was honored that they wanted me to make their wedding cake. A wedding cake arguably is the most important cake of your life! The wedding had a rustic feel but there was also a beautiful elegance to it. They used trees and pinecones as their main decorations so we wanted to have those throughout. I did my best to create the sugar flowers to match the bridesmaids bouquets, which also had pinecones. I oddly enough had seen several years ago a youtube tutorial video on how to create chocolate pinecones. You can see this tutorial video here.
We wanted to carry the tree and pinecone theme onto the cake so we had small trees on the tiers and on the bottom tier there was a heart with their initials on the bottom. I also found a pinecone mold that I could use to push brown gumpaste into it and create mini pinecones for on the tiers.
It was a four tier cake that had two different flavors; it was an almond cake with raspberry filling and chocolate cake with a chocolate ganache buttercream. I covered the tiers in a homemade marshmallow fondant.
The Bride, Heather, wrote the following to me about the cake – “You did such a great job! We are so thankful for you and what you did. The cake was absolutely perfect!”
